Please Note: Our July classes are on a Wed & Thursday evening this month rather than our regular Tuesday & Wed evening schedule.

When it comes to the Basque region, it’s all about the sheep’s milk! Whether the French or the Spanish side of the Pyrenees, ewe is the predominant milk used to make cheese although we do get some delicious mixed milk beauties as well as some delicious cow and goat ‘s milk cheeses from the lower lying valleys. Always smooth and buttery in texture, no matter the milk used to make it, the cheeses of this region are always rich & satisfying, not surprisingly they are consistently our top selling cheeses for good reason! We’ll be pairing with a dry, crisp rose from Provence to contrast the richness of the cheeses while offering us some cool respite in the now warm summer weather. Please join us for what is sure to be a delightful evening!
